Kheer with Bajra Malida 

This is an authentic and very popular sweat dish of North India and specially of Haryana and Rajasthan area. This is made especially on Makar Sakranti festival.

Bajra Roti is a traditional Indian flatbread made with bajra or black pearl millet flour making it extremely nutritious. Malida is a traditional sweet confection made out of leftover parathas or rotis by crumbling and pounding them coarsely and stir frying them with ghee, sugar, dry fruits and nuts.

Kheer with Bajra Malida

Ingredients

  • Kheer 

    • 100 grams rice
    • 750 grams milk
    • 100 grams brown sugar (Jaggery powder)
    • Nuts – almonds, cashews, raisins

    Bajra Malida

    1 Bajra Roti

    100 grams Jaggery

    50 grams Desi Ghee

Step by Step Instructions

Step 1

Boil milk with rice and allow to reduce by 50%.

Add nuts over the kheer, then place jaggery powder over the kheer.
Mix well Bajra Roti (Hot), Jaggery and Desi Ghee and make few balls of its mixture which called Malida.
