Mom’s Lentil & Beef Soup

Ingredients

  • 1 pound of green lentils, washed and picked over
  • 2 cups chopped onion
  • 2 cloves garlic, minced
  • 1 pound of ground beef
  • 2 teaspoons salt
  • 1 Tbsp of dill seeds
  • 1 teaspoon pepper
  • 15 oz tomato sauce
  • 8 oz spaghetti

Step by Step Instructions

Step 1

Bring to boil the lentils, onions, and garlic in 3-4 quarts of water. Turn the heat down so lentils simmer.  Partially cover the pot, and continue cooking over low heat for 2 hours, stirring occasionally.

Step 2

Microwave the ground beef for 6 minutes or cook on the stove until brown.

Step 3

Add the salt, dill seeds, pepper, and tomato sauce.
Cook for 1 hour.

Step 4

Break spaghetti into 1-inch pieces.  Add to lentils.  Cook 12-15 minutes.  Ready to serve.
