Puff Pastries with Fruit Compote

Ingredients

  • 1 package frozen puff pastry
  • 2 cups organic frozen berries
  • 1 cup organic sugar
  • 2 Tbsp. honey
  • 1 teaspoon salt
  • 3-4 Tbsp. powdered sugar

Step by Step Instructions

Step 1

Mix the frozen berries and sugar in a bowl, cover, and place with your frozen puff pastry in the refrigerator overnight to thaw.

Step 2

In the morning, slice your puff pastry in 2-inch squares. Roll the sides of each so that they have the appearance of little boats. Bake this puff pastry as directed on the package.

Step 3

While it is baking, place your berry & sugar mix into a small stove pan. Add the honey and salt and bring to a boil. Reduce heat to simmer and stir so as not to stick to bottom of pan. The goal is to eliminate as much moisture as possible from the mixture so that it becomes a thicker compote texture.

Add a little more salt to obtain this texture if necessary, taking care to not add too much for your taste.

Remove from heat as soon as it reaches your desired texture. Do not overcook.

Step 4

When the puff pastry is removed from the oven, fill each boat with your compote and dust the top of each with powdered sugar.
