Taco Soup

Ingredients

  • 2 lbs. ground beef
  • 1 large onion, diced
  • 1 can Mexicorn (do not drain)
  • 1 can (14.5 oz.) Mexican stewed tomatoes
  • 1 can diced tomatoes w/lime juice 
  • 1 can petite diced tomatoes
  • 1 can light kidney beans (do not drain)
  • 1 can dark kidney beans
  • 1 pkg. dry taco seasoning mix
  • 1 pkg. dry ranch dressing mix
  • Tomato juice

Step by Step Instructions

Step 1

Brown ground beef and onions in large soup pot and drain grease.

Add all remaining ingredients – Add tomato juice (and water) if needed to make soupier.

Serve with tortilla chips, Mexican blend shredded cheese and a side dish of sour cream.
