Oma’s Pannenkoeken – aka Grandmother’s Dutch Crepes
My grandma taught me to make these. They have simple ingredients and are delicious. Family and friends always ask me to show them how to make these after their children had some at my place. Every dog that I have ever owned, would be camping out in the kitchen, and hoping that I would drop a pancake while flipping.

Oma’s Pannenkoeken

Ingredients
For each person (typically four), multiply this list of ingredients with the number of persons on the table:
- 1 egg
- 75 grams of flour
- 150 ml of milk
- 1 teaspoon of sugar
- 1/2 teaspoon of cinnamon
- pinch of salt
- pinch of curry
Step by Step Instructions
Step 1
Mix well in a bowl, ensure you can pour in a frying pan, kind of buttermilk like thick fluid.
Step 2
Heat frying pan until a small bit of butter melts, and run butter until bottom covered with thin layer. Temperature is right when the molten turns brown quickly.
Step 3
Take some mix in your ladle, and gently pour on one side, and immediately tilt the pan until the mix runs and thinly covers the full pan. Now wait till the top dries out, then flip your pancake (throw up in the air), and brown the other side. In about one minute ready to slide out your plate, and typically would cover with an upside down plate, and keep adding more pannenkoeken on top of the first one, and build a stack before serving out.
Expert Tips:
- If your pancake gets too dark, reduce the heat a notch, and find your sweet spot.
- If your pancake does not seem to bake, turn up the heat a bit.
- Make sure you run a range hood fan on high, outside window on a crack helps promote fresh are circulation.
- Serve with brown sugar, white sugar, jam, nut butter or maple syrup.
- Children tend to love pannenkoeken, and is a fun family activity.
Masterclass:
1) Spek pannenkoeken: add bacon first in your pan, let the bacon brown for a minute, then thinly cover with mix and flip over same. Serve with maple syrup.
2) Apple pannenkoeken: pour mix in the pan, then quickly cover with shin slices of apple, and cover the apple with more mix. Cover the pan, and slow cook. Use cover to flip this fragile apple pannenkoeken. When well done, serve with icing sugar.
