Blueberry Pie with Pudding Cream

Ingredients
Dough
- 250 g. plain flour
- 10 g. fresh yeast
- 30 g. sugar
- 80-100 ml. warm milk
- 30 g. butter, melted
- 1 egg, beaten
Filling
- 200 ml. milk
- 1 bag vanilla pudding powder
- 80 g. sugar
- 250 g. curd
- 300-400 g. blueberries
- 150. g coarse flour + 100 g. butter
Step by Step Instructions
Step 1
Pour a little warm milk into a cup, add a teaspoon of sugar, crush the yeast, mix and leave to rise for 15 minutes.
Next, in another bowl, add flour, the rest of the milk and sugar, butter and eggs to form a soft and non-sticky dough; add a little flour and milk as needed. Work out and leave to rise for about an hour.
Step 2
Line the baking sheet with baking paper and roll out the dough on it.
Step 3
Take 6 tablespoons of the milk, mix the custard powder and 6 tablespoons of sugar in them.
Let the rest of the milk boil. Once it starts to boil, stir the custard mixture into it and cook the custard.
Set aside, stir in the curd and spread the cream on the dough. Sprinkle with blueberries and a “DROBENKA” of butter, coarse flour and leftover sugar.
Bake at 200 ° C for about 30 minutes.
Step 4
STREUSEL TOPPING
“DROBENKA” is used in the Czech Republic to sprinkle on sweet pastry before it’s baked in the oven.
The basic ingredients are flour, granulated sugar, and butter. The secret of streusel topping lies in the correct ratio between these three.
In the Czech Republic, the streusel topping (drobenka) is made from 2 parts of flour, 1 part of butter, and 1 part of sugar – 2:1:1 ratio.
Mix all the ingredients together using your fingers to get a crumbly mixture. No blender this time, please!
