Brændende Kærlighed (Burning Love)

Brændende Kærlighed (Burning Love)

Ingredients
- 1 kg potatoes ( you can use large baking potatoes)
- 600 g bacon, diced
- 2 onions, large
- 75 g butter
- 3/4 to 1 cup milk
- Salt and pepper to taste
Step by Step Instructions

Chop parsley.
Peel potatoes and cut them into large pieces. Cook the potatoes until they are tender.
Meanwhile, dice the bacon and fry on a dry pan until they are crisp. Remove the bacon and set aside.
Slice the onions and use the bacon oil to fry them until golden.
Add the bacon back to the pan. Add butter. Melt slowly.
Drain potatoes but do not allow them to cool. Add milk, half the butter and mash the potatoes (not too fine).
Add salt and pepper.
Arrange potatoes on a plate or bowl. Make a hole in the middle of mash for the melted butter.
Add the bacon dices and sliced onions on top of the mash.
Sprinkle with parsley and enjoy!
