Broccoli Cheddar Soup

Ingredients
- 1/4 cup butter
- 1/2 medium chopped onion
- 1/4 cup flour
- 2 cups half & half
- 2 cups chicken stock or broth
- 3 cups broccoli
- 1 cup julienned carrots
- 2 cups cheese
- Salt and pepper to taste
Step by Step Instructions
Step 1
Melt butter and sauté the onion until soft.
Add the flour over the mix. Cook and stir over medium heat for 1-2 minutes.
Step 2
Whisk in the half & half and chicken stock or broth.
Step 3
Add broccoli and carrots. Cook over low heat for 22 minutes or until the broccoli and carrots are tender.
Step 4
Add salt and pepper depending on preference. Return to low heat and add the cheese. Try adding bacon bits to add more zing.
Step 5
Serve with bread!
