Cynthia’s Sweet Potato Casserole

Ingredients

Casserole

  • 3 cups sweet potatoes (1 tall can)
  • ¾ cup brown sugar
  • 2 eggs
  • ¾ stick butter
  • 1 can condensed milk
  • ½ tsp. cinnamon

 

Topping (mix while filling is cooking)

  • ½ cup of pecans
  • 1/3 cup brown sugar
  • 1 cup corn flakes
  • ½ stick butter

I make this every Easter, Thanksgiving and Christmas. Even if you think you don’t like sweet potatoes you will love this. The topping sends it over the top. This has to be on our holiday table or I hear about it!

Step by Step Instructions

Step 1

Combine casserole ingredients until creamy. 

Bake 30-45 minutes at 400 degrees.

Step 2

Combine topping and spread over cooked layer.  I usually use a fork, this seems to work better.

Step 3

Cook the whole casserole for another 10 minutes at 400 degrees.
