Gramma’s Banana Pudding

Ingredients

  • 1/2 cup sugar
  • 1 Tbsp. corn starch
  • 1/4 tsp salt
  • 2-3 cups milk
  • 1 large egg
  • 2-3 Tbsp. water
  • 2 Tbsp. butter
  • 1 tsp vanilla
  • 1 box vanilla wafers
  • 3-4 bananas, ripe but firm

Gramma always had this each time we visited her during the summer months. There were days we devoured this fresh after it was made, not giving it a chance to cool and solidify. She taught me how to make it just a few years before she passed away, a memory I continue to cherish.

Step by Step Instructions

Step 1

Prepare ahead: Beat egg in cup; add the 2-3 tablespoons of water and stir well.  Add enough milk to make 1 cup of mixture.  Set aside. 

Step 2

In a saucepan, mix sugar, corn starch, salt and 2 cups milk then stir constantly over medium-low heat.  Bring to a boil. 

Step 3

Add the egg mixture to the saucepan very slowly.  Stir constantly maintaining boil until mixture is slightly thickened.  Turn off heat and stir in butter and vanilla.  Let pudding cool slightly until lukewarm.  

Step 4

In tall dessert glasses or a 2 or 3-quart serving dish, make layers of vanilla wafers and sliced bananas. 

Step 5

Pour pudding mixture over the wafers and bananas and let set. 

Step 6

Serve warm or chilled depending on preference.  When serving, garnish with a dollop of whipped cream, mint sprigs or slices of banana.
