Gyros Lamb Roast
Slice the lamb as thinly as possible, place it on pita bread, add Kalamata olives and feta cheese along with tomatoes, onion, and tzatziki. Homemade + from scratch = Gyros

Gyros Lamb Roast

Ingredients
Marinade
- 1 \3 tablespoons lemon juice
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon thyme
- 1/2 teaspoon oregano
- 1/2 tsp Bay leaf
- Salt and pepper to taste
Tzatziki

3 cups plain Greek yogurt

1 grated cucumber (grate into bowl; with paper towel squeeze out excess liquid to get most of the juice out before mixing into the yogurt)

2 -3 crushed garlic cloves – two or three depending on how garlicky you want it

Extra Virgin olive oil

Salt
-
Dash of vinegar

Dash of lemon juice
Add all this together to taste and leave in fridge to settle and get cold.
Step by Step Instructions
Step 1
Preheat oven to 425 degrees.
Place entire roast and marinade in 9 x 13 pan or equivalent.
Use a meat thermometer to roast lamb at 300 degrees if you prefer a slow roast (appx 2 hours) OR or roast at 425 degrees if you need it cooked sooner (appx 60 -90 min).
Turn temperature down if the oil starts to smoke which it could at 425 degrees
Once the lamb is done (160 degrees F), let it sit for 15 minutes covered in foil.
This is a good time to slice your onions, tomatoes, etc.
