Jollof Rice

Don’t be too conservative with the condiments and spices. Please be generous and definitely add some more if you feel like it. I do that a lot.

Ingredients

  • 2 cups rice, long grain
  • 1 red bell pepper
  • 2  tomatoes
  • 2  red onions
  • 6oz tomato paste olive oil
  • 1 Tbsp. salt
  • 1 Tbsp. cayenne pepper
  • 1/2 Tbsp. garlic powder
  • 1/2 Tbsp. thyme
  • 1/2 Tbsp. curry power
  • 2 bullions cubes (either chicken or vegetable)

Step by Step Instructions

Step 1

Chop up onions, bell peppers and tomatoes and throw into a blender. Blend until finely chopped.

Step 2

Chop up some more onions and sauté them in some olive oil. Then add all the condiments (salt, cayenne pepper, garlic powder).

Step 3

Leave to sauté for 3 minutes and then add tomato paste and stir.

Step 4

Leave for 5 more minutes and then add the blended mixture.

Step 5

Leave to cook for 30 minutes.

Step 6

Preheat oven to 400F.

Step 7

Wash 2 cups of rice then put in an oven pan.

Step 8

Pour the stew mixture that has been cooking for 30 minutes into the oven pan and mix with the rice.

Step 9

Add some water ~ 1.5 cups

Step 10

Cover up with foil and leave to cook for 45minutes. Enjoy served hot.
