Mexican Lasagna

Delicious and easy and if you enjoy tacos, you will enjoy this! Can also be prepared in advance and cooked later.

Ingredients

  • 1 pkg flour or corn tortillas
  • 1 lb ground beef
  • 1 cup salsa
  • 1 (15oz) can tomato sauce
  • 1 pkg taco seasoning mix
  • 1 (16oz) carton cottage cheese
  • 2 eggs
  • 1 tsp oregano
  • 1 1/2 cups shredded cheddar & Monterey jack cheese
  • Optional: sour cream, shredded lettuce, black olives

Step by Step Instructions

Step 1

Heat oven to 375 degrees. Meanwhile, brown meat and drain.

Step 2

Stir in salsa, tomato sauce and taco seasoning. Simmer, stirring frequently for 5 minutes.

Step 3

In separate bowl, combine cottage cheese, eggs and oregano. 

Step 4

Line bottom of lightly greased 13 x 9 baking dish with half of the tortillas, overlapping edges. Top with half the meat mixture. Spoon cottage cheese mixture over meat. Arrange remaining tortillas over cheese mixture. Spread remaining meat mixture over all and top with shredded cheese. 

Step 5

Bake for 30-35 minutes or until bubbly. Let stand for 10 minutes. Serve with sour cream, shredded lettuce, black olives or your favorite taco fixings. Enjoy!
