“Mom’s” Chicken Divan
Mom used to make this all the time when I was a kid…now I make it (using fresh broccoli is much better than frozen). We just love it and it is so easy and great to eat. The picture is an actual image of the dish. Enjoy!

“Mom’s” Chicken Divan

Ingredients
- 2 – 10 oz packages of frozen broccoli spears (I often use fresh broccoli and microwave or steam it first)
- 1/2 cup butter
- 6 tablespoons all-purpose flour
- 2 cups chicken broth
- 1/2 cup whipping cream
- 3 tablespoons dry white wine
- 3 chicken breasts, halved and cooked (see note)
- 1/4 cup grated parmesan cheese (I do use more will explain below)
- Salt and pepper to taste
Note – Chicken in recipe to be cut in half, I cook and cut in strips so it is easier to plate later. Strips similar to the strips of broccoli.
Step by Step Instructions
Step 1
Cook broccoli using package directions (or if fresh microwave or steam to cook), drain. Melt butter, blend in flour, 1/2 teaspoon salt and dash of pepper. Add chicken broth, cook and stir till mixture thickens and bubbles. Stir in cream and wine.
Step 2
Place broccoli crosswise in baking dish.
Pour half the sauce over. Top with chicken.
To the remaining sauce add the cheese, pour over chicken.
Step 3
Sprinkle with additional Parmesan cheese (this is the part that I use more than the 1/4 cup – 1/4 cup goes in the sauce and when topping use as much or as little as you want).
Step 4
Bake at 350 degrees for 20 minutes or until heated through. Then broil just until sauce is golden brown (about 5 minutes).
