Portuguese Cavacas/Popovers

I love these because they can be savory or sweet. I prefer without the icing sugar, but if you have a sweet tooth, you could even drizzle melted chocolate over them instead of icing sugar and let that cool or eat them plain.

Portuguese Cavacas/Popovers

Ingredients

For the dough:

  • 6 large eggs
  • 1 cup flour
  • 1/2 cup oil (any tasteless oil, I use avocado oil)

For the icing: 

  • 1 cup confectioners sugar
  • 1 Tbsp. milk
  • lemon zest

Step by Step Instructions

Step 1

Preheat oven to 400 degrees Fahrenheit.

Step 2

Mix flour and oil together with wooden spatula. Once well mixed start incorporating 2 eggs at a time until each is well combined. Do this 3x to incorporate all the eggs.

Step 3

Grease a cupcake pan/popover tin and fill the holes with batter about 3/4 of the way.

Step 4

Bake in the oven for about 30 minutes until they are golden brown (do not open the baking oven door for the whole time or they will collapse). Turn off oven and leave in oven for 5 minutes more.

Step 5

After they are done, remove from the oven, and let them cool.

Step 6

Mix confectioners sugar with the milk in a saucepan on medium heat until it becomes a syrup consistency. You can add lemon zest if you like a citrusy taste (I do).

Now spread the icing over the cavacas and serve!
