Super Simple Marinara 

This is an old family recipe and a go to once a week.  It is so easy and can be ready in less than 30 minutes.  Serve with crusty Italian bread because you will want to sop up every last drop.

Super Simple Marinara

Ingredients

 

  • 8 cloves of fresh garlic, minced
  • 1/4 cup Extra Virgin Olive Oil (EVOO)
  • 2 Tbsp. minced parsley (dried or fresh)
  • 2 large cans of plum tomatoes
  • Red pepper flakes or ground black pepper

     

  • 1 box linguini pasta

Step by Step Instructions

Step 1

In quart pan, add EVOO and minced garlic and heat until garlic is just golden brown. Remove from heat immediately.

Add parsley and cans of tomatoes – crushing the tomatoes in your hands as you add them to the pan.

Add back to heat and add pepper and dash of salt – to your liking, but remember that as pepper heats – it will open up and get spicier.

Note: Sometimes I will add and simmer in Italian sausage.

 

Step 2

Cover and simmer mixture about 30 minutes until tomatoes break down. Remove cover and simmer a bit more until slightly thickened. This sauce is very light – does not need to be thick. Just enough to stick to the pasta. 

Serve over linguini.
